A new resin artwork, celebrating the memory of Chef Pierre Troisgros and his famous 'salmon with sorrel' dish, was unveiled this Wednesday at the Le Coteau train station square.

In the presence of Sandra Creuzet-Taite, Joy Talbat, Michel Troisgros and his family, the artwork by Marianne Vieulès was unveiled. This sculpture, made of resin, depicts stylized salmon fillets caught in the wind, a direct evocation of the Maison Troisgros' signature dish.
Following the loss of the Marronniers fresco due to a hailstorm in 2022, the City of Le Coteau launched a call for projects. Marianne Vieulès' proposal was selected for its ability to capture the chef's spirit.
The artist aimed to capture from Chef Pierre his 'passion for cooking', his 'experimentation', and his 'fun', imagining a piece that was 'amusing, light', reflecting 'a spirit that was in motion'.
For Michel Troisgros, who grew up in this neighborhood near the family home, this location is symbolic. He now expresses the wish to see 'the Le Coteau station repainted salmon-with-sorrel color'.
A QR code at the base of the artwork allows visitors to discover its history and the context of its creation.
